Vietnamese chef Le Thi Anh Thu graces the treetops of Nest

Niyama’s Nest serves up avant-garde Asian cuisines, from fiery teppanyaki to spicy Thai. Now adding new layers of colour and texture, visiting chef Le Thi Anh Thu whips up Vietnam’s finest five-flavoured cuisines 4 – 14 July 2018.

An executive chef at sister resort Anantara Hoi An, Chef Le is a rising young star, working her way through some of Vietnam’s hottest resort kitchens, from The Nam Hai in Hoi An to Fusion Maia in Da Nang. Explore the subtle variations in flavour and spice levels from cool north to tropical south.

Your evening begins with the sound of birdsong quivering in the trees above. Making your way through the jungle canopy on suspended walkways, your table appears perched 6 m in the air.

Start with a crisp banana blossom or aloe vera salad to whet the palate. A journey follows: from the north, sizzling Hanoi fishcakes; from imperial Hue, bun bo Hue noodle soup and savoury crepes; from Hoi An, caramelised pork belly glazed to perfection; and finally, for those who dare, Chef Le’s signature dish of spicy curried frog. Finish your feast with one final indulgence – grilled banana in coconut milk with crushed peanuts or a steaming cup of famous egg coffee.

Chef Le’s hand-crafted dishes will be available throughout the fortnight at Nest, with an exclusive wine dinner scheduled for 14th July.
