This sweet and gluttonous cake is traditionally eaten across China and other parts of Asia this time of year to celebrate the New Year. This year, it’s the “Chinese Year of the Rat” – and falls on 25 January 2020.
Nian gao is expertly made but uses rather simple ingredients, including rice flour, egg, water and quite a lot of sugar. It’s then normally stored in the fridge to give it extra texture during the days leading up to Chinese New Year, and then lightly fried before eating.
